Part of the Chinese philosophy behind acupuncture involves embracing personal peace. If you've really mastered that, we're having trouble imagining a job with less stress involved than being a traditional Chinese medicine practitioner.
You're spending your days helping people with their problems. You're delicately placing painless needles into your patients to the dulcet tones of a babbling brook...mp3. You're filling an incense jar with lavender and speaking in your calmest voice. Not exactly talking down a hostage taker, now is it?
That being said, many acupuncturists work long hours—sometimes building their income by working for personal clients on the weekends when not at their Monday-to-Friday day jobs. It takes a fairly special sort of person to listen to the ills of others on a daily basis without an incredible amount of their own personal time to decompress on the side.
