Physical Danger
Working as a food service manager carries many of the same dangers as any other position in a restaurant: sharp knives, food poisoning, hot stoves, hot ovens, and oily floor tiles just begging you to lose your balance and slip. It's a dangerous place for those who don't pay attention and, unfortunately for the person running a restaurant, it's not always so easy to focus on one thing at a time.
Don't worry—it's not exactly lion taming. Be sure to take some knife skills classes, use caution when working around fire, and hire people who aren't reckless. Perhaps most importantly, keep the restaurant clean. It's surprising how many safety issues disappear through daily cleaning and organization.
